A few nights ago I headed out to a pizzeria with some friends for a nice dinner. Normally when eating at a pizzeria I just order pizza but I thought I’d give the eggplant Parmesan a shot since I do enjoy eggplant but don’t cook it at home. Of course the food was delicious and the plate was sparkling clean when I was done with it.
A few nights ago I decided I’d place an order for pick up at the same restaurant. I was pretty excited to have that yummy Parmesan eggplant dish in my tummy. We drove down to the restaurant and as I walk in the door the girl who took my order explained that they have run out of out of eggplant and she was unable to call me to let me know. Next time I better leave my number :-/. I was devastated. I had been thinking about that dish all week. If you haven’t gathered by now, I love food. As most people, I do my best to hit the gym and workout as often as possible – but I enjoy food.
While at the grocery store the next day I decided I’d give the eggplant Parmesan a go but this time, I will be cooking it myself. I knew I had most of the ingredients at home and mainly just needed the eggplant. Once I was home I immediately started to search for recipes online. This dish was so easy to make and many of the ingredients are staples in my spice rack.
I got to work.
An hour and a half later ….
I had two helpings. I wasn’t sure where I was going with the pasta at the time but thought I would season it in case there was a better use for it the following night with another type of dish that wasn’t in red sauce.
Overall I was very happy with my final dish and I can tell you with confidence that I don’t plan on calling in any restaurants for pick up any time soon.
